how to make Lekor?

Lekor, also known as keropok lekor, is a popular snack in Malaysia made from fish and sago flour. Here’s a recipe to make lekor:

Ingredients:

1 lb (500g) fish (such as mackerel or catfish), cleaned and deboned

1 cup (150g) sago flour

1/2 cup (60g) tapioca flour

1 teaspoon salt

1/2 teaspoon sugar

1/2 teaspoon white pepper

1 cup (240ml) water

Oil, for deep frying

Instructions:

In a food processor, blend the fish into a smooth paste. Transfer the fish paste to a large bowl.

Add the sago flour, tapioca flour, salt, sugar, and white pepper to the fish paste. Mix well.

Gradually add the water to the mixture, stirring constantly, until the mixture becomes a smooth and pliable dough.

Divide the dough into small portions, about the size of a ping-pong ball.

Roll each portion of dough into a long, thin log, about 8-10 inches in length and 1 inch in diameter.

Bring a large pot of water to a boil. Add the fish logs to the boiling water and cook until they float to the surface, about 5-8 minutes.

Using a slotted spoon, remove the fish logs from the water and let them cool.

Cut the fish logs into thin slices, about 1/4 inch thick.

Heat the oil in a deep fryer or a wok over medium heat. Fry the fish slices in the hot oil until they are golden brown and crispy, about 3-5 minutes.

Remove the lekor from the oil and drain on paper towels. Serve hot with chili sauce or sweet chili sauce for dipping.
