How to Make Torta Tre Monti recipe?

Torta Tre Monti, also known as “Cake of Three Mountains,” is a traditional Italian dessert that consists of layers of hazelnut meringue and chocolate-hazelnut cream. Here’s a recipe to make Torta Tre Monti:

Ingredients:

7 oz (200g) hazelnuts

4 egg whites

7 oz (200g) granulated sugar

1/2 cup (100g) chocolate-hazelnut spread (such as Nutella)

1/2 cup (120ml) heavy cream

Cocoa powder, for dusting

Instructions:

Preheat the oven to 300°F (150°C). Spread the hazelnuts on a baking sheet and toast them in the oven for 10-15 minutes, until golden. Let cool, then rub them with a clean kitchen towel to remove as much of the skins as possible.

Finely chop the hazelnuts in a food processor, then set aside.

In a large bowl, beat the egg whites until stiff peaks form.

Gradually add the sugar, 1 tablespoon at a time, and continue beating until the mixture is thick and glossy.

Gently fold in the chopped hazelnuts.

Line a baking sheet with parchment paper. Using a piping bag, pipe the hazelnut meringue into 20-24 circles (about 2 inches in diameter) onto the parchment paper.

Bake the meringue circles for 25-30 minutes, until crisp on the outside but still slightly chewy on the inside. Let cool completely.

In a separate bowl, whisk together the chocolate-hazelnut spread and heavy cream until smooth and creamy.

To assemble the cake, spread a layer of the chocolate-hazelnut cream onto a meringue circle, then top with another meringue circle. Repeat with the remaining meringue circles and chocolate-hazelnut cream, stacking them into a pyramid shape.

Dust the top of the cake with cocoa powder. Refrigerate the cake for at least 2 hours, or until the cream is set and the meringue is crisp. Serve cold.
